Meat? Not so much.

I can't say that this surprises me a bit. Most hamburger sold to the major chains isn't 'ground chuck' or ground round or derived from a specific piece of skeletal muscle; it's the bovine equivalent of mechanically separated chicken, the bits and pieces washed and centrifuged off of the carcass after all the usable cuts have been obtained from it. As far as the 'vegetable matter' mentioned in the study, Mc Donalds openly disclosed that they used carageenan (up to 10%) in their 'Mc Lean' burger line, but in any case, all that '100% ground beef' means is that it had cow as its origin someplace ;).

While the Sarcocystis is somewhat worrisome, most people don't fret too much about the fat, cartilege, and blood vessels they're consuming when they eat a piece of solid flesh either and more or less expect to find these things in ground beef - the real (non) surprise is how much of the matrix was water, and a big part of the secret of their profits. It's nice to know they *didn't* find nervous tissue in their samples, because to be truthful, the main reason I'd been avoiding ground beef (other than the greatly increased food safety risk of bacterial food poisoning) was the possibility of BSE...

All that is also in the finest cuts of steak and other cuts of beef. The more connective tissue the more tender. As an example it is better to use a bottom round in certain beef dishes than a top round because bottom round has more connective tissue.

So? Cook your freaking meat and your fine... Big juicy sirloin sounds goo about right now. More fat the better. Holds the flavor.

Doesnt suprise me to see this was the results of commercial fast food testing. the sheer volume coupled with the low price demand the fast food conglomorates require easily dictate you are not gonna a high quality product.
Your local grocerey will always be a better product. only reason i shy away from ground beef in general has to do with suspicions about sanitation from these places.

The whole water content result is natural. dead flesh leeches its life source and all mammals are essentially animated waterbags.

Nope...although my hunger pangs were for a real burger.

Ice cream is largely air...bastards...

But it is true. We like to cry against things like this or meat farms where animals are speedy grown in cages, but we can't sustain our culture at the prices we currently do by any other means.

Being a god send doesn't mean it isn't made out of mostly bones, connective tissues, organs, and intestines of animals.
