Probably not, depending on your setup. Your provider's DNS is probably faster in most cases, although if you're on a smaller one or an incompetent one that may not be the case.
If you're on Comcast or similar who hijacks DNS queries on non-resolves like a pack of fucking jackals in clear violation of the standard, it might be worth it, although I just set up a local caching server on my Mac for the local network.

I'd be surprised if it makes any difference for someone with a decent ISP. It's impossible for Google's DNS servers to be closer on the network than your ISP's.
Not to mention it helps them continue tracking your activity on sites without AdSense or Google Analytics (not that the ISPs don't, but it's at least nice to decentralize who knows what about you).
