I was on The Swiftsure but switched due to 3 hour queues. I am now Empire on Infinite Empire.

The RP servers seem to have a more mature population - I can never remember the names of them though.

Evolone and myself are on Kaas City - Empire

Queues are 15-30min. majority of late afternoon/evening. I suspect it will calm down after holidays are over as many are off on vacation atm.

I couldn't tell you how mature the server is as I have all channels other than whisper and guild filtered to another tab. General interaction for missions etc has been pleasant however once you got outside the lower planets. Starter gather nodes/quest objectives were a PITA since you couldn't do alot of them in combat and people would steal them. Haven't really seen to much of that as we got higher though
